Princeton Cocktail

Princeton.

Geschichtete Drinks kommen nicht nur in Form eines Pousse-Cafés auf den Tisch, sondern es gibt auch geschichtete Cocktails. Der Princeton Cocktail ist ein gelungenes Beispiel aus Old Tom Gin, Orangenbitter und Port.

60 ml Hayman’s Old Tom Gin
30 ml Graham’s Tawny Port 20 Jahre
1 dash Scrappy’s Orange Bitters

Zubereitung: Old Tom Gin und Orangenbitter auf Eis rühren, in das Glas geben, in dieses vorsichtig den Portwein geben, so daß dieser auf den Grund des Glases fließen kann.

Die Rezeptvarianten

Wir wollen nicht zu sehr darauf eingehen, wer wann den Princeton Cocktail oder einen verwandten Cocktail wie abgewandelt oder falsch zubereitet bzw. benannt hat. Dies ist an dieser Stelle vielleicht etwas zu ermüdend, und der geneigte Leser mag selbst einen Blick in die Rezeptsammlung werfen. Stattdessen geben wir an dieser Stelle nur wider, was sich grundsätzlich aus der Rezeptsammlung ableiten läßt. Was ein Princeton Cocktail ist, darüber gibt es trotz aller Varianten, die im Laufe der Zeit hervorgebracht wurden, eine Einigkeit.

Für einen echten Princeton Cocktail, erstmals 1895 erschienen, verwendet man Old Tom Gin, rührt diesen mit Orangenbitter, gibt diese Mischung in ein Glas und  anschließend einen Port darüber, der dann auf den Boden des Glases sinkt.

Es gibt zahlreiche andere Cocktails, die zwar auch Princeton Cocktail heißen, aber trotzdem nur vereinzelt veröffentlicht wurden. Lediglich die erstmals 1934 auftretende Variante aus Gin, französischem Wermut und Limettensaft wird in den Folgejahren regelmäßig zitiert.

Ein Union League Cocktail, erstmals 1913 bei Jacques Straub erschienen, ist im Grunde genommen eine Variante des Princeton Cocktails, und kann als ebenso populär gelten. Er unterscheidet sich von einem Princeton Cocktail lediglich dadurch, daß alle Zutaten, also auch der Portwein, gemeinsam gerührt werden. Beim Princeton Cocktail wird der Port nachträglich ins Gästeglas geschichtet.

In den Folgejahren werden diese Beiden Varianten, Princeton Cocktail und Union League Cocktail, oft durcheinander gebracht und nicht klar voneinander getrennt.

Um es ganz deutlich zu sagen: Der Union League Cocktail ist ohne Fehl und Tadel. Aber der Princeton Cocktail gefällt uns wesentlich besser. Durch die Schichtung verändert sich der Cocktail während des Trinkens und eröffnet so eine neue Dimension. Also ganz klar die Empfehlung unsererseits, dem Princeton Cocktail den Vorzug zu geben!

Der Princeton Cocktail muß um 1900 sehr beliebt gewesen sein. In den Zeitungen der damaligen Zeit gehört er zu den wenigen Cocktails, die in Flaschen abgefüllt angeboten werden, so wie dies auch für Manhattan Cocktails, Martini Cocktails, Whiskey Cocktails und Vermouth Cocktails geschah. Doch es handelte es sich dann nicht um einen Princeton Cocktail, sondern um einen Union League Cocktail –  da der Portwein sich in den Flaschen mit den übrigen Ingredienzien vermischt. Alternativ könnte es sich natürlich auch um einen anderen Cocktail handeln, der ebenfalls Princeton hieß, doch wir haben in den Rezeptbüchern erst 1910 eine abweichende Rezeptur gefunden, so daß man wohl davon ausgehen kann, der in Flaschen abgefüllte Princeton ist der klassische, mit Old Tom Gin, Port und Orangenbitter.

Allerdings kann man dies nicht mit Bestimmtheit sagen. Wir haben zwar in den Rezeptbüchern erst ab 1910 andere Rezepturen gefunden, doch gibt es einen Zeitungsartikel in der New Yorker Sun vom 18. Dezember 1901, in dem die Rede davon ist, daß ein Princeton Cocktail eine Spielart des Manhattan Cocktails sei, und daß man französischen Bitter und französischen Absinth dafür verwende: „The newest of cocktails is the Princeton. It is said to have been invented by a bartender at a big chophouse bar. With it he invented a Yale cocktail so as to be on the safe side no matter which college won in football this fall. Curiously enough the Princeton cocktail was the one which survived the test put to it by drinkers although Yale won the football game. The Princeton is a sort of parody of the old Manhattan, the bitters and absinthe being both French.“ [6] Ein derartiges Rezept haben wir jedoch ansonsten nirgends finden können.

Es sei uns an dieser Stelle vielleicht noch erlaubt, auf diejenigen Cocktails einzugehen, die einen anderen Namen erhalten haben.

  • Der 1928 veröffentlichte Crimson Cocktail ist nichts anderes als ein mit Dry Gin hergestellter Princeton Cocktail. Allerdings ist seine Bezeichnung als Crimson Cocktail unglücklich gewählt, denn 1906 führt Louis Muckensturm einen Crimson Cocktail auf, der aus Sloe Gin, französischem Wermut und Angostura- und Orangen-Bitter besteht; jedoch ist Louis Muckensturms Bezeichnung ebenfalls irreführend, denn sein Cocktail ist ein Sloe Gin Cocktail, wie wir in einem weiteren Beitrag noch zeigen werden. 1953 hingegen wird ein Crimson Cocktail bei Leo Cotton mit Dry Gin, Zitronensaft, Grenadine und Portwein zubereitet. Stan Jones verzichtet 1977 auf Grenadine und verwendet stattdessen Zucker. Man weiß also eigentlich nicht, was denn nun ein Crimson Cocktail wirklich ist.
  • Der Honolulu Cocktail aus dem Jahr 1930 ist ein Union League Cocktail mit weißem Port.
  • Der 1933 erschienene Hi Ho Cocktail ist ein Union League Cocktail mit einer Zitronenzeste.
  • Der ebenfalls 1933 erschienene Mariposa Cocktail ist ebenfalls ein Union League Cocktail. Allerdings ist die Bezeichnung auch aus einem anderen Grunde verkehrt. Denn die älteren Namensrechte für einen Mariposa Cocktail liegen 1930 bei Gedelp. Hier wird der Mariposa mit Bacardi-Rum, Cognac, Grapefruitsaft und Zitronenzeste zubereitet. Diesen nimmt Jim Meehan 2008 auf, verwendet jedoch Orangensaft anstelle des Grapefruitsaftes.
  • Der 1937 bei Julio Castro erschienene Calamuchita hat entfernt etwas mit einem Union League Cocktail zu tun, bestehend aus Gin, Port und anstelle des Orangenbitters mit einem anderen Bitter.

Namensgebung des Princeton Cocktails

Benannt ist der Princeton Cocktail nach der Stadt Princeton in New Jersey. 1930 sehen Charlie Roe und Jim Schwenck in ihrem Buch „The Home-Bartender’s Guide“ einen Zusammenhang mit der Princeton University und deren Football-Mannschaft. Dieser Gedanke wird auch von Magnus Brecenbeck 1934 in „What Shall We Drink“ aufgegriffen. Der Gedanke liegt nahe, denn es gibt auch Cocktails, die nach anderen Elite-Universitäten benannt sind: Yale und Harvard.

Die erste Rezeptur für einen Princeton Cocktail erschien 1895 in George J. Kappelers „Modern American Drinks“. In diesem ist auch der Harvard und der Yale Cocktail aufgeführt.

Beschäftigen wir uns also in diesem Zusammenhang einmal näher mit der Geschichte der gleichnamigen Universität. Die Princeton University ist eine Privatuniversität und liegt in der Stadt Princeton in New Jersey, rund 90 Kilometer von Manhattan entfernt. Sie ist die viertälteste Universität der Vereinigten Staaten und gehört zusammen mit den Universitäten Yale und Harvard zu den angesehensten und reichsten Universitäten der Welt. Sie hat das weltweit größte Pro-Kopf-Vermögen einer Universität überhaupt. Der Vermögenswert belief sich im Jahr 2015 auf knapp 21 Milliarden US-Dollar. [1] Die Princeton University wurde als „College of New Jersey“ am 22. Oktober 1746 gegründet. Zunächst befand sich das College für ein Jahr in Elizabeth, anschließend für neun Jahre in Newark und wurde erst 1756 nach Princeton verlegt. Der ursprüngliche Name wurde aber vorerst beibehalten. Erst 1896 wurde das College aufgrund seiner erweiterten Fakultäten zur „Princeton University“. [1]

Da der Cocktail älter ist, kann er also nicht nach der Universität benannt worden sein, sondern nur nach dem Ort, in der sie lag.

Namensgebung des Union League Cocktails

Der Vollständigkeit halber wollen wir auch auf die Bezeichnung des Union League Cocktails eingehen. 1931 erklärt uns Albert Stevens Crockett in „Old Waldorf Days“, daß der Drink nach dem Union League Club  in New York benannt sei.

Der New Yorker Union League Club wurde 1863 in New York gegründet. Interessant ist vielleicht die Tatsache, daß ihr zweites Clubhaus bis 1881 die Jerome Mansion war. [2] Über dieses Gebäude haben wir im Zusammenhang mit dem Manhattan Cocktail geschrieben. Doch wollen wir an dieser Stelle unsere Zweifel vorbringen. Wir glauben nicht, daß es der New Yorker Union League Club war, der dem Drink seinen Namen gab. Auch in anderen Städten gab es Union League Clubs. Sie wurden während des amerikanischen Bürgerkriegs (zwischen 1861 und 1865) gegründet, um die Loyalität gegenüber der Union der Vereinigten Staaten von Amerika zu fördern und die Politik des neu gewählten Präsidenten Abraham Lincoln. [4]

Ausschlaggebend für unseren Einwand ist, daß der Cocktail erstmals von Jacques Straub veröffentlicht wurde. Dieser war in Chicago tätig, und dort erschien auch sein Buch. Namensgebend wird daher mit größerer Wahrscheinlichkeit der 1879 in Chicago gegründete, doch bis 1862 zurückreichende Union League Club sein. Die Mitglieder dieses Clubs spielten in Chicago eine wichtige Rolle bei der Gründung vieler kultureller Organisationen, darunter das Art Institute of Chicago, die Orchestra Hall, das Auditorium Theater und das Field Museum. Allerdings können wir auch dies nicht mit Sicherheit behaupten. Denn leider gibt es einen Zeitungsartikel in der New York Tribune aus dem Jahr 1894, in dem man davon spricht Union League oder Manhattan Cocktails zu trinken. [7] Woraus dieser Union League Cocktail bestand, wird uns leider nicht überliefert, so daß wir auch nicht wissen, ob er mit Jacques Straubs Rezeptur identisch war, und ob sein Union League Cocktail nicht doch nach dem New Yorker Union League Club benannt sein könnte.
