Aviation Cocktail 1912

Aviation 1912.

Es gibt mehrere verschiedene Rezepturen, die alle „Aviation Cocktail“ heißen. Die allgemein bekannte mit Crème de Violette aus dem Jahr 1916 ist jedoch die jüngste. Die anderen gerieten in Vergessenheit, doch diejenige aus dem Jahr 1912 ist ein wahres Juwel.

Zubereitung: Gerührt.

Alternativ und von uns aktuell bevorzugt:

45 ml Dubonnet
45 ml Lustau Amontillado Escuadrilla Sherry

Über die Geschichte des Aviation Cocktails und die verschiedenen historischen Rezepturen haben wir ausführlich bereits in unserem Beitrag über den Aviation Cocktail berichtet. Nur die jüngste Rezeptur ist heute allgemein bekannt, die anderen gerieten in Vergessenheit. Doch die älteste, eine Mischung aus Dubonnet und trockenem Sherry, verdient es, wieder bekannter gemacht zu werden.

Abhängig von den verwendeten Ingredienzien findet man die Kombination aus Dubonnet und Sherry unter verschiedenen Namen. Dubonnet und Sherry werden immer verwendet, wahlweise kommen Orangenbitter oder Pecon Bitter hinzu, auch kann man eine Orangenzeste oder -scheibe mitschütteln. In diesen Varianten erscheint der Drink

  • 1908 als Dubonnet Cocktail (elf Nennungen)
  • 1912 als Aviation Cocktail (zehn Nennungen)
  • 1914 als Zaza Cocktail (elf Nennungen)
  • 1929 als Stoneleigh (eine Nennung),
  • 1930 als Katinka (eine Nennung)
  • 1934 als Bambooler Cocktail (eine Nennung)
  • 1934 als Jack and Charles Special Cocktail (eine Nennung)
  • 1934 als Merry Widow (zwei Nennungen)
  • 1934 als Miami Cocktail (eine Nennung)
  • 1938 als Alfonso Cocktail (vier Nennungen)
  • 1938 als Aviator (eine Nennung)
  • 1949 als Alphonso XIII (vier Nennungen)

Von all diesen Varianten haben wir uns für die Mischung aus Dubonnet und trockenem Sherry, ohne weitere Zugaben, entschieden. Sie war für uns die beste. Dies ist auch die Variante, die 1912 erstmals als Aviation Cocktail bezeichnet wird.

Die Frage ist nun, wie man diesen Drink nennen soll. Unter einem Dubonnet Cocktail und auch unter einem Zaza Cocktail versteht man in der Regel einen Cocktail aus Gin und Dubonnet, wie wir in einem eigenen Beitrag noch zeigen werden. Folglich sollte man beide Bezeichnungen nicht für diesen Drink verwenden. Der Dubonnet Cocktail ist darüber hinaus sehr variantenreich, so daß er in den Büchern teilweise durchnummeriert wird. Die Version mit Sherry und Dubonnet ist beispielsweise bei William Boothby im Jahr 1930 der „Dubonnet Cocktail No. 4“. Ähnlich sieht es für den Zaza Cocktail aus. Die uns interessierende Variante ist bei William Boothby der „Zaza Cocktail No. 3“.

Die dritte mögliche Bezeichnung aus Zeiten vor der Prohibition ist Aviation Cocktail. Man findet diese Bezeichnung bei der ältesten Veröffentlichung, die Dubonnet und Sherry ohne weitere Zusätze miteinander kombiniert, und zwar 1912 in William Boothbys „The World’s Drinks and How to Mix Them“. Zwar versteht man unter einem Aviation Cocktail heutzutage die Variante aus dem Jahr 1916, bestehend aus Gin, Zitronensaft, Maraschino und Crème de Violette. Doch da die Bezeichnung „Aviation Cocktail“ erstmals für die Rezeptur verwendet wurde, um die es in diesem Beitrag geht, und sie somit die älteren Rechte hat, haben wir uns dafür entschieden, „Aviation Cocktail 1912“ zu verwenden. Zur damaligen Zeit war die Luftfahrt, auf englisch „aviation“, etwas Neues, und so erklärt sich der Name. Näher gehen wir darauf in unserem Beitrag über den Aviation Cocktail ein.

Ob der Aviation Cocktail, der 1912 publiziert wurde, derjenige ist, der bereits ein Jahr zuvor im Washington Herald erwähnt wurde, vermögen wir nicht zu sagen. Dort ist die Rede davon, daß jemand den Aviation Cocktail erfunden habe: „Aviation Cocktail. From the Chicago Record-Herald. Somebody has invented an „aviation cocktail,“ but the aviation 5-cnt cigar is slow in appearing.“.[1] Woraus dieser Aviation Cocktail besteht, wird uns leider nicht mitgeteilt.

Alle anderen Bezeichnungen werden nur einmalig genannt, sind sehr viel jünger und werden teilweise auch für andere Drinks verwendet. Merry Widow ist eine Bezeichnung, unter der zahlreiche verschiedene Drinks publiziert wurden, und der Alfonso wird in der Regel mit Champagner hergestellt.

Dubonnet is one of the best-known appetisers in the world. It is not only used for cocktails but also as a cooler and highball.

The Dubonnet Cocktail, formerly called „Zaza Cocktail,“ includes:
1/4 gill of Gin.
1/4 gill of Dubonnet.
Stir up in ice, strain into a cocktail-glass, and squeeze orange-peel on top.

When desired dry, use 2/6 gill of Gin and 1/6 gill of Dubonnet instead of equal parts.

In San Francisco the Dubonnet Cocktail is made differently. Its ingredients are:
3 dashes of Orange Bitters.
2/6 gill of Dubonnet.
1/6 gill of Dry Pale Sherry.
Stir up well, strain into a cocktail-glass, with a cherry and lemon-peel squeezed on top.

1 teaspoonful of Orange Bitters,
1 dash of Orange Peel Juice.
1 Cherry.
1/2 tumblerful of broken Ice.
Half fill a tumbler with broken ice and add the
Pale Sherry. Then put in the Orange Bitters
and the Dubonnet. Stir up and pass through a
strainer into a cocktail glass. Serve with a
cherry and a dash of orange peel juice on top.
A very refreshing cocktail.

Observations
This is an old-timer, and if for no other reason
merits a place in the book. Sherry wine is often
(and properly) drunk alone as an appetizer be
fore dinner. Sherry, the dryest of all sweet wines,
has a peculiar ability to sharpen the appetite.
With Dubonett, a French sweet wine, it creates
a mixture of rare mellowness, almost like over
ripe fruit. The best Sherry is produced at Jerez
de la Frontera, Spain.
