Zaza Cocktail

Zaza Cocktail.

Der Zaza Cocktail, oft auch Dubonnet Cocktail genannt, besticht durch seine Einfachheit und Eleganz: Dubonnet kombiniert mit Gin. Im wahrsten Sinne des Wortes: Ein königliches Getränk.

45 ml Hayman Royal Dock Gin
45 ml Dubonnet

Zubereitung: Gerührt. Mit einer Zitronenzeste abspritzen.

Diesen Drink nahm schon Queen Mum zu sich, und auch Elizabeth II. soll ihn täglich, kurz vor dem Mittagessen, zu sich nehmen. Sie bevorzugt ihn mit einem Teil Gin und zwei Teilen Dubonnet zubereitet. [1] [2]

Bezüglich der Zutaten ist dies ein einfacher Drink, bezüglich der Namensgebung wird es hingegen schon schwieriger. Man findet ihn hauptsächlich als Zaza Cocktail oder Dubonnet Cocktail publiziert. Unter diesen beiden Namen finden sich jedoch auch Drinks mit einer gänzlich anderen Rezeptur. Darüber hinaus wird eine Kombination aus Dubonnet, Gin und optional Bitter auch unter anderen Bezeichnungen veröffentlicht. Bei unserer Rezeptsammlung im Anhang unterscheiden wir hierbei jedoch zunächst einmal nicht nach der Art des Gins, so daß auch Rezepte mit Orange Gin und Old Tom Gin in ihr vorkommen. Erst dadurch ergibt sich eine vollständige Übersicht, zumal es einige, wenn auch wenige, Rezepte mit der Verwendung eines Old Tom Gins in einem Dubonnet Cocktail gibt. Neben Zaza Cocktail und Dubonnet Cocktail finden sich folgende Bezeichnungen, wobei wir in Klammern das Jahr der Erstpublikation angeben: Appetizer Cocktail (1926), Appetizer No. 1 (1917), Appetizer No. 2 (1956), Arraras Cocktail (1928), Chinita Cocktail (1930), Colonial (1953), Coronation 1953 (1965), Daunou Cocktail (1927), Dauphine Cocktail (1931), Early Bird (1951), Edner Cocktail (1916), Hevia Cocktail (1930), Jackson Cocktail (1917), Jack Zeller (1908), Merry Widow Cocktail (1916), Nassau (1930), Piccad (1977), Real Cocktail (1927), Royal Cocktail (1922), Simpático (1930), Transvaal (1956).

Wie also soll man diesen Drink nun nennen? Wir entscheiden uns für Zaza Cocktail. Das hat folgende Gründe:

Aufgrund der Häufung kommen nur Zaza Cocktail oder Dubonnet Cocktail in Betracht. Alle anderen Bezeichnungen tauchen zu selten auf und werden zusammengenommen nur in 15 bis 20 Prozent der Fälle verwendet.

Zu Beginn überwiegt die Bezeichnung Zaza Cocktail für Drinks, die mit Dubonnet, Gin und optional Bitter hergestellt werden gegenüber der Bezeichnung Dubonnet Cocktail für dieselbe Kombination. Unter einem Dubonnet Cocktail versteht man in dieser Periode zudem überwiegend einen Drink aus anderen Zutaten, während dies für einen Zaza Cocktail nicht der Fall ist. Wir tun also Recht darin, diesen Drink Zaza Cocktail zu nennen.

Die erste gedruckte Rezeptur für einen Zaza Cocktail, die wir finden konnten, stammt aus dem Jahr 1900. Dieser ist eine Kombination aus Gin, französischem Wermut, Bitter und etwas Maraschino-Saft, [3] also eine Art „Fancy Martini Cocktail“, und wir wollen diesen Fund deshalb hier nicht für die Namensgebung berücksichtigen. Hier hat der Martini Cocktail, respektive der Martinez Cocktail, sicherlich die älteren Namensrechte. Die Bezeichnung Zaza Cocktail für eine Kombination aus Dubonnet, Gin und optional Bitter haben wir in den Büchern erstmals im Jahr 1908 gefunden.

Er wird aber bereits 1904 in der New York Times genannt, mit Bitter zubereitet, gemeinsam mit einem Dubonnet Cocktail, der unter Verwendung von Brandy zubereitet wird. Man schreibt, daß der Zaza Cocktail bei vielen Besuchern des Broadway beliebt sei, und daß es sich um einen noch nicht so alten Drink handle: [6]

„The Zaza cocktail is not so old but that it is new, and it finds favor with many of the Broadwayites. It is made up of dry gin, Dubonnet, and orange bitters, served in a cocktail glass. A modification of this, known as the Dubonnet cocktail, is made of Dubonnet, brandy, and orange bitters, the only difference being the substitution of brandy for the dry gin.“

Das läßt darauf schließen, daß der Zaza Cocktail recht beliebt war, und zwar nicht nur in New York. Nur so läßt es sich erklären, daß 1907 mit diesem im The Washington Herald dafür geworben wurde, Gin und Dubonnet in der To-Kalon Wine Co. zu erwerben. [4]

1908 lesen wir über den Zaza Cocktail im The San Francisco Call. Es wird berichtet, daß er aus Korea kommenden französischen Besuchern von Jules Clerfayt vorgestellt worden sei, und daß man ihn mehrfach getrunken habe. Leider wird uns nicht berichtet, woraus dieser in San Francisco getrunkene Zaza Cocktail zubereitet wurde. [5]

Die Version mit Dubonnet und Gin wird immer wieder entweder mit zusätzlichem Bitter oder ohne diesen zubereitet. Ein Blick in die Rezepte gibt Aufschluß darüber,bei welcher Version die Präferenz liegt:

Es zeigt sich, daß bis 1919 in rund 75 Prozent der Fälle Gin und Dubonnet ohne Bitter zubereitet werden, nach 1941 sind es nur noch rund 65 Prozent. Wir folgen dieser Einschätzung und verzichten auf die Zugabe von Bitter, zumal im Dubonnet selbst schon Bitterstoffe enthalten sind. Bei der Garnierung gibt es verschiedene Möglichkeiten, wir finden eine Zitronenzeste ganz passend.

Über die Bedeutung der Bezeichnung läßt sich nicht viel sagen. Eine Erklärung findet man nicht. Wohl jedoch den Hinweis bei William Boothby aus dem Jahr 1908, daß der Zaza Cocktail aus Frankreich stamme und in französischen Cafés wohl bekannt sei.

Aber auch hier ist es leider so, daß wir nicht wissen, ob der Zaza Cocktail aus Frankreich kommend in den USA bekannt wurde, oder ob er in den USA entstand und bis 1908 in jedem französischen Café bekannt gemacht wurde. Am wahrscheinlichsten halten wir die erste Variante: Der Cocktail entstand ursprünglich in Frankreich.

Es gibt jedoch Stimmen, denen zufolge der Drink nach dem französischen Theaterstück „Zaza“ benannt wurde. Geschrieben wurde es von Pierre Berton und Charles Simon, die erste Aufführung fand im „Théâtre du Vaudeville“ in Paris im Mai 1898 statt. Ebenfalls 1898 wurde die englischsprachige Adaption im „Lafayette Square Opera House“ in Washington, D.C. und dann 1899 im „Garrick Theatre“ in New York City aufgeführt. [3] [7]

Das Garrick Theatre grenzt unmittelbar an den Broadway an. [11] Der Erfolg des Zaza Cocktails am Broadway ließe sich also gut mit der Aufführung des Bühnenwerkes am Broadway erklären.

Die Rolle der Zaza wurde in Paris sehr erfolgreich von Gabrielle Réjane gespielt. [7] [9] In New York von Leslie Carter. [12]

Vor diesem Hintergrund ist es also gut vorstellbar, daß der Cocktail tatsächlich nach diesem Stück benannt wurde. Auch seine Popularität in Frankreich paßt in dieses Bild.

Es gäbe auch noch die Möglichkeit, daß der Cocktail nach einer 1900 in Mailand uraufgeführten Oper von Ruggero Leoncavallo bezeichnet wurde, die 1903 ebenfalls in Paris aufgeführt wurde, [10] doch diesen Zusammenhang halten wir für sehr unwahrscheinlich.

Es wird auch gesagt, der ›Dubonnet Cocktail‹ sei in New York entstanden, im Café Martin, das von dem aus Frankreich stammenden Jean-Baptiste Martin betrieben wurde. [13-236]

Dubonnet is one of the best-known appetisers in the world. It is not only used for cocktails but also as a cooler and highball.

The Dubonnet Cocktail, formerly called „Zaza Cocktail,“ includes:
1/4 gill of Gin.
1/4 gill of Dubonnet.
Stir up in ice, strain into a cocktail-glass, and squeeze orange-peel on top.

When desired dry, use 2/6 gill of Gin and 1/6 gill of Dubonnet instead of equal parts.

In San Francisco the Dubonnet Cocktail is made differently. Its ingredients are:
3 dashes of Orange Bitters.
2/6 gill of Dubonnet.
1/6 gill of Dry Pale Sherry.
Stir up well, strain into a cocktail-glass, with a cherry and lemon-peel squeezed on top.

Another Cocktail made with Dubonnet which is very popular in London just now includes:
1 dash of Orange Bitters.
1 dash of Angostura Bitters.
1/6 gill of Dubonnet.
1/6 gill of Sherry.
1/6 gill of French Vermouth.
Orange-peel squeezed on top.

MIXING A DUBONNET COCKTAIL
To make a Dubonnet Cocktail is one of the simplest opera-
tions of them all. Two ounces of gin and two ounces of
Dubonnet, a French preparation whose ingredients are
secret, should be shaken until cold and served in cocktail
glass. Easy, isn’t it? Try it with whisky or rum, instead of

2 ounces red Dubonnet
1 ounce gin
A dash of orange bitters
(optional)
3 to 4 ice cubes
1 strip orange peel
A 4-ounce cocktail glass, chilled
Combine the Dubonnet , gin, orange bitters (if you wish) and ice cubes in
a mixing glass. Stir very gently with a bar spoon, place a strainer over the
mixing glass, and pour into a cocktail glass. Twist the orange peel over
the cocktail glass to release the oil, and rub the cut edge of the peel
around the inside rim of the glass, but do not drop it in.
