Aviation Cocktail

Der Aviation Cocktail ist einer derjenigen großartigen Cocktails, die vor der Prohibition erfunden wurden. Das Original konnte lange Zeit nicht mehr zubereitet werden, da Crème de Violette lange Zeit nicht verfügbar war. Doch dies hat sich glücklicherweise geändert, so daß wir uns an diesem Cocktail laben können.

50 ml Eversbusch Doppelwachholder
10 ml Zitronensaft
10 ml Schladerer Maraschino
10 ml Rothman & Winter Crème de Violette

Zubereitung: Geschüttelt.

Alternativ und von uns aktuell bevorzugt:

60 ml Finsbury 47 Gin
30 ml Zitronensaft
10 ml Schladerer Maraschino
10 ml Bigallet Crème de Violette

Einen Aviation Cocktail haben wir erstmals erwähnt gefunden im Washington Herald vom 22. September 1911. Dort ist die Rede davon, daß jemand den Aviation Cocktail erfunden habe: „Aviation Cocktail. From the Chicago Record-Herald. Somebody has invented an „aviation cocktail,“ but the aviation 5-cnt cigar is slow in appearing.“.[2] Woraus dieser Aviation Cocktail besteht, wird uns leider nicht mitgeteilt. Dies wäre insbesondere deshalb interessant, da kurz nacheinander mehrere verschiedene Cocktails gleichen Namens publiziert werden.

Greg Boehm hat uns mitgeteilt, daß er einen noch älteren Artikel gefunden hat, vielleicht handelt es sich hier um denselben Cocktail? Am 9. Januar 1911 erschien im San Francisco Chronicle auf Seite 2 ein Text, in dem ein Aviation Cocktail beschrieben wird. Dort heißt es, „“Dick“ Ferris was one of the visitors at the hangars yesterday. He arrived with a recipe for what he called an „aviation cocktail.“ It is mixed as follows: „Whiskey, a dash of Italian vermouth, bitters and a drop.“ „A drop of what, Dick?“ asked a friend. „Any old drop suits an aviator, so long as it is on the soft spot,“ was the reply.“ [11] Diesem Artikel zufolge sei Dick Ferris also am 8. Januar 1911 einer der Besucher am Hangar gewesen. Er hätte ein Rezept für den „Aviation Cocktail“ dabei gehabt, welches aus Whiskey, einem Dash italienischem Wermut, Bitter und einem Tropfen bestünde. Ein Freund hätte gefragt, um was für einen Tropfen es sich handle, und Dick antwortete, daß jeder alte Tropfen einem Piloten recht sei, solange er eine Schwäche dafür habe.

Wir haben uns auch in den historischen Büchern umgesehen und so insgesamt neun verschiedene Varianten gefunden.

  • 1911 erscheint im San Francisco Chronicle ein Aviation Cocktail, der im Grunde genommen ein Manhattan Cocktail ist. Er besteht aus Whiskey, italienischem Wermut und Bitter.
  • 1912 publiziert William Boothby einen Aviation Cocktail. Diese Variante besteht aus Dubonnet und Sherry.
  • 1913 erscheint bei Jacques Straub ein anderer Aviation Cocktail, bestehend aus Applejack und Limette, abgerundet mit etwas Absinth und Grenadine.
  • 1914 veröffentlicht Ernest P. Rawling seine aus irischem Whiskey und Traubensaft bestehende Version.
  • 1916 erscheint bei Hugo Ensslin schließlich der Cocktail, der heute allgemein als Aviation Cocktail bekannt ist, bestehend aus Gin und Zitronensaft mit etwas Maraschino und Crème de Violette. [7] [8] Uns liegt leider nur die zweite Ausgabe von 1917 vor. Falls jemand das Original besitzt, wären wir sehr an einer Kopie interessiert.
  • 1930 schließlich taucht bei Harry Craddock erstmals die Abwandlung von Hugo Ensslins Rezeptur auf, bei der Crème de Violette weggelassen wird.
  • 1944 kennt Oscar Haimo eine Variante mit Gin, Limettensaft, Maraschino und Cointreau.
  • 1956 verwendet Patrick Gavin Duffy Gin, Zitronensaft, Maraschino und Apricot Brandy.
  • 1976 ist für Brian F. Rea ein Aviation nichts anderes als ein Gin Sour mit einer Maraschino-Kirsche.

Daß innerhalb weniger Jahre gleich vier verschiedene „Aviation Cocktails“ veröffentlicht werden, verwundert nicht unbedingt. Man muß sich nur in den Zeitungen der damaligen Zeit umsehen, um zu verstehen, daß das Thema Luftfahrt (auf englisch: aviation) in aller Munde war.

Zwar fand der erste Flug bereits mehrere Jahre vor dem Auftauchen des ersten Aviation Cocktails statt, denn der erste stabile Motorflug der Welt gelang wohl am 14. August 1901 dem Deutsch-Amerikaner Gustav Weißkopf. Es mag diesbezüglich zwar Widerspruch geben, doch wollen wir an dieser Stelle nicht diskutieren, wem der erste Motorflug nun wirklich gelang. Im Gespräch sind auch Richard Pearse am 31. März 1903 in Neuseeland oder Karl Jatho am 18. August 1903 in Hannover. Allgemein gelten die Flüge der Brüder Wright am 17. Dezember 1903 als Beginn des gesteuerten Motorflugs. Es dauerte nicht lange bis weitere Erfolge eintraten. Beispielsweise überquerte der Franzose Louis Blérot am 25. Juli 1909 erstmals den Ärmelkanal mit einem Flugzeug. [1]

Heute versteht man unter einem Aviation Cocktail im allgemeinen sicherlich die Version von Hugo Ensslin. Ob er auch von ihm stammt, wissen wir nicht, er hat nie Anspruch darauf erhoben. Hugo Ensslin war Barchef im Wallick Hotel am New Yorker Time Square, und wir werden in einem eigenen Beitrag mehr über ihn berichten. Er verwendet „El Bart Gin“, doch das sollte uns nicht in die Irre leiten. Diese Ginmarke war Sponsor seines Buches, und so dürfen wir mit Sicherheit in der Wahl unseres Gins eine gewisse Freiheit walten lassen. [7] [8]

Da Crème de Violette bald nicht mehr problemlos verfügbar war, verwendete man ihn offensichtlich nicht mehr, und so entstand wohl aus Mangel die bei Harry Craddock veröffentlichte Version, nur mit Maraschino zubereitet, die bei weitem nicht an das Original heranreicht. Vielleicht verschwand der Crème de Violette aber einfach auch deshalb nur aus der Rezeptur, weil das „Savoy Cocktail Book“ zwar zahlreiche Rezepte aus anderen Büchern übernahm, aber dabei zahlreiche Fehler unterlaufen sind. Da das Buch aus dem Savoy weitreichende Beachtung fand und als Standardwerk galt, erklärt sich, daß in den Folgejahren der Aviation Cocktail in Unkenntnis des Originals auch in anderen Büchern nur mit Maraschino zubereitet wurde. Hugo Ensslin kannte niemand, und so dachte man lange Zeit, die Version aus dem Savoy Hotel sei die Originalversion. Die Bezeichnung „Aviation Cocktail“ erklärt sich jedoch erst, wenn man sich Hugo Ensslins Original zuwendet. Denn durch die Zugabe des Crème de Violette erhält der Cocktail eine bläuliche, dem Himmel ähnliche Färbung. [4] [7] [8]

Crème de Violette verschwand schließlich vollständig vom Markt. Spätestens seit den 1960er Jahren war er in den USA nicht mehr verfügbar, und auch sonst war er fast verschwunden. [5] [6] Wir können uns glücklich schätzen, daß er inzwischen wiederentdeckt und verfügbar gemacht wurde. Es ist eine zauberhafte Zutat, die – gekonnt eingesetzt – wundervolle Drinks zaubern kann. Allerdings muß man sehr auf die Qualität achten, denn manche Hersteller produzieren einen Likör, der ganz scheußlich nach Seife schmeckt. Man versteht schnell, daß diejenigen, die in den „Genuß“ solch einer Grausligkeit gelangten, schnell einem Crème de Violette gegenüber keine gute Meinung haben und ihn zu vermeiden wünschen.

Für einen gut balancierten Aviation Cocktail ist deshalb die Wahl des richtigen Crème de Violettes unabdingbar. Er soll nicht zu süß und parfümiert sein, aber auch nicht zu sauer. Nils Wrage bringt es auf den Punkt: »ein guter, sauber abgestimmter Aviation bleibt ein beeindruckender Cocktail: Herb, frisch, komplex, mit dieser zarten Blumigkeit – und der wahrscheinlich elegantesten Möglichkeit, einen blauen Drink zu trinken.« [13]

Crème de Violette ist seit ein Likör, der Mitte des 18. Jahrhunderts eine französische Spezialität war und der seit den 1780er Jahren auch in die USA exportiert wurde. Seine Wurzeln reichen weit zurück. Veilchenlikör und -sirup gibt es mindestens seit dem 17. Jahrhundert. [14-206]

Veilchensirup war schon in jener Zeit eine Zutat für Mischgetränke. William Salomon publiziert im Jahr 1694 Rezeptur für eine Art Punch: »Diatessaron Potabile, Das Julep der vier Dinge. Bate] ℞ Geist von französischem Wein oder französischen Brandy ℥iv. [4 Unzen] Saft von Zitronen ℥ij. [2 Unzen] Sirup von Veilchen ℥v. [5 Unzen]  gutes Wasser ℥xij. [12 Unzen] mische und mache einen Julep, von einem wohltuenden Geschmack: Vor dem Fieberkrampf zu trinken. Salomon] §1. Dies ist in Wahrheit nur eine Art kleiner Punch … .« [15-759]

Er bezieht sich dabei auf eine lateinische Ausgabe von 1688: »Diatessaron Potabile. ℞ Sp. V. Gallici ℥iiii. Succ. limon. ℥ii. Syr. Viol ℥v. Hydropeg. ℥xii. n. f. Julap. gratum, ante paroxysmos febriles bibendum.« [16-37]

Der originale Aviation Cocktail gilt heute zurecht als ein klassischer Drink – doch war er in vergangenen Zeiten keinesfalls bekannt und wird nicht nur zu Zeiten seiner Entstehung ein Schattendasein geführt haben. Erst seit seiner Wiederentdeckung hat er sich den Platz erobert, der ihm zurecht zusteht. [7]

Der Aviation Cocktail ist einer unserer ausgesprochenen Lieblingsdrinks. Für uns haben wir den Zitronenanteil reduziert, um so die übrigen Aromen des Cocktails mehr in den Vordergrund zu stellen. Wir mögen es, wenn er nur einen geringen Säureanteil besitzt.

Wir schließen uns voll und ganz Gaz Regans Einschätzung an: „Bring it to the lips and sip, don’t gulp. This is truly one of the nectars of the gods. Stands head and torso above the Aviation sans violette.“ [4] Führen wir ihn also an unsere Lippen und nippen daran. Kippen wir ihn nicht herunter, denn dies ist wahrhaftig einer der Nektare der Götter, und er steht meilenweit über dem ohne Crème de Violette zubereiteten Aviation Cocktail!

Observations
This is an old-timer, and if for no other reason
merits a place in the book. Sherry wine is often
(and properly) drunk alone as an appetizer be-
fore dinner. Sherry, the dryest of all sweet wines,
has a peculiar ability to sharpen the appetite.
With Dubonett, a French sweet wine, it creates
a mixture of rare mellowness, almost like over
ripe fruit. The best Sherry is produced at Jerez
de la Frontera, Spain.
