Bamboo Cocktail

Bamboo Cocktail.

Der Bamboo Cocktail ist ein alter Drink, der sich bis 1886 zurückverfolgen läßt. Ein Cocktail, der durch seine feinen Aromen und seinen geringen Alkoholgehalt besticht. Angeblich entwickelte Louis Eppinger ihn im Grand Hotel von Yokohama in Japan. Doch es gibt Quellen, die eindeutig dagegen sprechen. Wir analysieren sie und schlagen eine neue Deutung vor.

Anmerkungen: Nach unserem Dafürhalten muß bei einem Fino entsprechend der Originalrezeptur ein Mischungsverhältnis von 3:1 angesetzt werden, und auch die Bitters dürfen nur dezent sein, um den feinen Sherry nicht zu übertönen. Bei einem robusteren Amontillado hingegen können mehr Bitters und Wermut verwendet werden. Unser Versuch hat gezeigt, daß der Bamboo gerührt zwar gut ist, noch besser wird er aber, wenn er geworfen wird, das heißt man schüttet in zwischen zwei Bechern (einer mit Eis, einer ohne Eis) hin und her.

Den meisten Quellen zufolge wurde der Bamboo von Louis Eppinger kreiert. Letzterer gilt als einer der Väter des japanischen Bartendings. [1] Dies macht ihn zu einer bedeutenden Persönlichkeit der Barkultur, und wir wollen ihm deshalb einen eigenen Beitrag widmen.

So viel sei an dieser Stelle gesagt: Nachdem er in San Francisco und Portland Bartender gewesen war, erreichte er das Grand Hotel in Yokohama im Jahre 1889. Wir haben gelesen, daß er dort innerhalb der folgenden ein oder zwei Jahre den Bamboo Cocktail entwickelte, der als ein Klassiker gelten kann. [1] [5]

Wodurch Louis Eppinger zu diesem Drink inspiriert wurde, weiß niemand genau. Man hört, daß der Bamboo Cocktail wohl auf einer Abwandlung des Adonis Cocktails basieren solle, und das letzterer ein populärer Drink zur damaligen Zeit gewesen sei. [1] [4] Hier möchten wir jedoch einwenden, daß wir die Bezeichnung „Adonis Cocktail“ in einem Bar-Buch erstmals 1913 in „The Complete Manual of Mixing Drinks“ von Jacques Straub gefunden haben. Zwar wird ein Adonis Cocktail in der New Yorker „The Sun“ bereits am 27. März 1887 erwähnt, doch ist er hier nichts anderes als ein „Turf Club Cocktail“, wie auch ausdrücklich erwähnt, [10] also eine Mischung aus Old Tom, Wermut und Bitters, wenn man die Rezeptur von Georg Winters „How To Mix Drinks“ aus dem Jahr 1884 zugrunde legt. Man darf diesen Fund also durchaus bei unserer Betrachtung eines Drinks aus Sherry und Wermut ignorieren. Wir konnten feststellen, daß der Bamboo Cocktail der erste Drink mit Sherry und Wermut ist. Alle anderen Varianten wie beispielsweise der Adonis Cocktail (die Variante mit Sherry und Wermut) sind jünger.  Wir können also zusammenfassend feststellen, daß der Bamboo Cocktail der ältere Drink ist und originär entstanden ist.

Als Alternative wird vorgeschlagen, daß der Bamboo Cocktail vom Martini Cocktail inspiriert wurde. [1] Gegen diese Theorie spricht, daß ein dem Bamboo Cocktail vergleichbarer „trockener“ Martinez (also eine Mischung aus Gin, Wermut und Bitters) in den frühen Jahren praktisch nicht vorkommt, wie wir bei einer Betrachtung des Martinez Cocktails festgestellt haben. Bei Betrachtung des Martini Cocktails (denn wie wir festgestellt haben, unterscheiden sich beide nur in der Bezeichnung, sind aber ansonsten identisch), taucht eine Mischung bestehend nur aus Gin, Wermut und Bitters, also ein „Dry Plain Martini Cocktail“, erst 1895 auf. Somit ist auch diese Theorie wenig plausibel, und einmal mehr zeigt sich die Originalität des Bamboo Cocktails.

Als einen Vorgänger des Bamboo Cocktails könnte man den „Sherry and Bitters“ betrachten, den Jerry Thomas bereits im jahr 1862 publiziert. Sein Rezept ist einfach: 1 dash Bitter und ein Wein-Glas Sherry. [24] Ersetzt man nun einen Teil des Sherries durch Wermut, beides fortifizierte Weine, erhält man einen Bamboo Cocktail respective einen Adonis Cocktail.

In den meisten Büchern werden für einen Bamboo Cocktail gleiche Teile Sherry und Wermut verlangt. Dies entspricht anscheinend nicht dem Originalrezept. Keisuke Oda, Nachfolger Louis Eppingers im Grand Hotel in Yokohama, welches 1913 in „New Grand Hotel“ umbenannt wurde, gibt an, daß das originale Rezept nach dreimal soviel Sherry wie Wermut verlange. [1] Dieses Verhältnis wird auch durch die ersten amerikanischen Belege bestätigt, und wir werden im Folgenden auf diese noch genauer eingehen. In Japan verwenden anscheinend fast alle Bartender noch immer dieses Verhältnis, und es findet sich so auch in japanischen Bar-Büchern. Im Sea Guardian II, der Bar des New Grand Hotels, wird der Bamboo heute wie folgt zubereitet: [1]

45 ml Tio Pepe fino
15 ml Noilly Prat
1 dash Orangenbitters

Sherry ist ein facettenreiches Getränk, und reicht vom knochentrockenen Fino bis hin zum reichhaltigen, süßen Oloroso. Offensichtlich bevorzugen die meisten japanischen Bartender einen Fino und ebenso die obenstehende Rezeptur. [1] Das mag damit zusammenhängen, daß ein Fino am ehesten zur japanischen Küche zu passen scheint. So wird beispielsweise der auch von uns favorisierte „Lustau Fino Jarana“ ausdrücklich für Sushi und Sashimi empfohlen. [14]

Auch bei der Zubereitung gibt es Varianten. Daiki Kaneteka stellt einen Bamboo her, indem er ihn von einem Glas ins andere gießt, um Sauerstoff hinzuzufügen. Dadurch würden die Aromen geöffnet, so erfährt man, und wenn man denjenigen glauben schenken darf, die seinen so hergestellten Bamboo Cocktail verkostet haben, sei er der beste, den es gäbe. [1]

Zur Namensgebung des Cocktails gibt es ebenfalls verschiedene Vorschläge. Einer besagt beispielsweise, daß er nach Bob Coles Lied „Under the Bamboo Tree“ aus dem Jahr 1902 benannt wurde. Dies kann jedoch nicht sein, da der Drink wesentlich älter ist. [3] 1937 gibt Johan R. Iverson in „Liquid Gems“ an, der Bamboo Cocktail hätte seinen Namen aufgrund seiner Färbung erhalten, die an Bambus erinnere. Er verwendet in seinem Rezept jedoch italienischen Wermut und Sherry. Ob diese Erklärung stimmt, sei einmal dahingestellt. Wir können den Wahrheitsgehalt nicht prüfen. Eine weitere Erklärung wird 1886 in der Western Kansas World gegeben, und wir gehen weiter unten näher darauf ein.

Wie wir sehen, ist über den Bamboo Cocktail also wenig Belegbares bekannt, und es gibt viele Mythen. Auch für die Zuschreibung des Cocktails zu Louis Eppinger gibt es nur einen historischen Beleg, den wir finden konnten, und auf den sich anscheinend alle anderen berufen. Dieser Beleg stammt von William Boothby. In seinem Buch „The World’s Drinks“ gibt er 1908 an, der Bamboo Cocktail stamme von Louis Eppinger, aus dem Grand Hotel in Yokohama, Japan:

Davon abgeleitet lesen wir überall: Der Bamboo Cocktail stammt von Louis Eppinger, der ihn in Yokohama, im Grand Hotel, entwickelte.

Stimmt das? Nein.

Wir haben zwar keine weiteren zuverlässigen historischen Quellen gefunden, die uns darüber informieren, von wem der Bamboo Cocktail stammt. Wir lassen einmal die Aussage von Harry McElhone aus dem Jahr 1923 in seinem Buch „„Harry“ of Ciro’s ABC of Mixing Cocktails“ außer Acht, der Drink stamme von Carlie Mahoney, Bartender im Hoffman House in New York. Wir wissen nicht, woher diese Information stammt. Da diese Angabe allerdings recht jung ist, aus dem Jahr 1923, schenken wir ihr wenig Glauben. Wenn der Drink wirklich von Charles S. Mahoney stammte, so wäre er sicherlich in dessen Buch „The Hoffman House Bartender’s Guide“ aus dem Jahr 1912 verzeichnet. In diesem Buch fehlt jedoch der Bamboo Cocktail. Auch im 1914 erschienenen „New Bartender’s Guide“, welches Charles Mahoney zugeschrieben wird, fehlt er. Wir dürfen also Charles Mahoney aller Wahrscheinlichkeit nach als Urheber des Bamboo Cocktails ausschließen.

Wir haben jedoch Quellen gefunden, anhand derer sich eindeutig feststellen läßt, daß der Bamboo Cocktail nicht in den Jahren um 1890, als Louis Eppinger in Yokohama war, entstanden sein kann.

Bereits 3 Jahre bevor Louis Eppinger in Yokohama ankam, war der Drink bekannt. Am 11. September 1886 war in der Western Kansas World zu lesen: „A new and insiduous drink has been introduced by some Englishman, and is becoming popular in New York barrooms. It consists of three parts sherry and one part vermouth, and is called „bamboo.““, also: „Ein neues und heimtückisches Getränk wurde von einigen Engländern bekannt gemacht und wird in New Yorker Bars populär. Es besteht aus drei Teilen Sherry und einem Teil Wermut, und wird „Bamboo“ genannt.“  [6]

Acht Tage später, am 19. September 1886 schrieb der St. Paul Daily Globe: „One of the latest and most insidious drinks was recently introduced into swell saloons in this city by an Englishman. It consists of three parts sherry and one part vermouth. It is called „Bamboo.“ probably because after imbibing the drinker feels like „raising Cain.““, also:  „Eines der neuesten und höchst heimtückischen Getränke wurde vor kurzem durch einen Engländer in den famosesten Saloons dieser Stadt bekannt gemacht. Es besteht aus drei Teilen Sherry und einem Teil Wermut. Es wird „Bamboo“ genannt, vermutlich weil der Trinkende sich nach dem Genuß fühlt wie „raising Cain““. [7] Diese idiomatische Redewendung bedarf der Erklärung. „Raising Cain“ bezieht sich auf die biblische Geschichte von Kain und Abel, in der Kain seinen Bruder Abel erschlug. Der Ausdruck bedeutet idiomatisch so viel wie „Probleme verursachen“ oder sich „in störender Weise verhalten“. [8] Der Zusammenhang mit „Bamboo“ erklärt sich durch ein Wortspiel. Bambusrohr heißt auf englisch „bamboo cane“, und „cane“ klingt ähnlich wie „Cain“. Auf der Suche nach der Erklärung für diesen Zeitungsartikel ist uns noch ein weiterer witziger Satz eingefallen, den wir nicht verschweigen wollen: „I have had three Bamboo Cocktails, and I am totally bamboozled because of all the booze“, was sich übersetzen läßt mit „Ich hatte drei Bamboo Cocktails, und ich bin völlig verwirrt  infolge des ganzen Alkohols.“

Beide Zeitungsartikel besagen nicht, daß der Drink von Louis Eppinger stammt, sondern es wird explizit darauf hingewiesen, der Drink sei von einem respektive mehreren Engländern bekannt gemacht worden und werde inzwischen in New York populär. Wir haben keine weiteren Originalquellen dafür gefunden, daß der Bamboo Cocktail zu dieser Zeit wirklich in New York populär geworden war. Wir haben historische New Yorker Zeitungen durchsucht, haben jedoch keinen Hinweis darauf gefunden. Auch in den Barbüchern fehlt er lange Zeit. Leider ohne Quellenangabe berichtet jedoch David Wondrich davon, daß der Bamboo Cocktail 1893 in den Hotels und Cafés am Broadway ausgeschenkt wurde und zur Jahrhundertwende weithin bereits in Flaschen abgefüllt erhältich war. [22]

Doch woher haben die Engländer die Rezeptur des Bamboo Cocktails? Entweder von außerhalb oder innerhalb der USA. Was mag nun wahrscheinlicher sein? Zwar gibt es hier keine Belege, aber unsere Einschätzung hängt davon ab, ob wir William Boothby Glauben schenken oder nicht. Letzterer sagt nur, der Drink stamme von und wurde benannt von „Louis Eppinger, Yokohama, Japan“. Das läßt zwei Interpretationen zu: Der Drink stammt von Louis Eppinger, und entstand, als er in Yokohama war, oder der Drink stammt von Louis Eppinger, der sich zum Zeitpunkt des Erscheinens des Buches, 1908, in Yokohama befand. Wenn wir William Boothby Glauben schenken, dann bedeutet dies gleichzeitig, daß die Engländer die Rezeptur direkt von Louis Eppinger (oder über Umwege) erhalten haben. Portland ist um die 2500 km von WaKeeney, Kansas, wo die Western Kansas World erschien, entfernt. St. Paul, Minnesota, ist von Portland sogar um die 2800 km entfernt. Zwischen WaKeeney und St. Paul liegen rund 1200 km. Bei diesen Entfernungen ist es wahrscheinlich, daß der Bamboo Cocktail dort nicht von Louis Eppinger persönlich bekannt gemacht worden war.

Doch wie wahrscheinlich ist es, daß Engländer die Rezeptur von Louis Eppinger erhalten haben? Wo war Louis Eppinger um 1886, bevor er nach Yokohama ging? Im San Francisco Call lesen wir über Louis Eppinger am 12. Mai 1896, daß er aus San Francisco kommend 1885 nach Portland kam. „During the great stock-booming period in San Francisco Eppinger kept a small saloon on Halleck street, … and he came to Portland in 1885.“ [11] Andere Quellen sprechen davon, er sei bereits 1877 oder 1879 nach Portland gegangen. Er eröffnete in Portland den Bureau Saloon, der als einer der ältesten, größten und besten Saloons in Portland galt. [15] [16] Doch er scheint nicht nur dort, sondern auch in anderen Häusern tätig gewesen zu sein. Am 15. August 1885 wird er im Roseburg Review in einer Anzeige des „The Gilman House“ in Portland genannt, [9] am 1. November 1883 wird in The West Shore „Eppinger’s Restaurant“ beworben. [12] Er eröffnete nicht nur einen der ersten Saloons in Portland, sondern auch 1883 ein Restaurant. [13]

Portland war für den Großteil des 19. Jahrhunderts, bis in die 1890er Jahre der Haupthafen im pazifischen Nordwesten, und so wird es nicht unwahrscheinlich gewesen sein, daß dort auch Engländer durchreisten und bei Louis Eppinger einen Bamboo Cocktail serviert bekamen. [17] Vielleicht inspirierten gerade diese Engländer Louis Eppinger dazu, den Bamboo Cocktail zu entwickeln, da Sherry in England eine lange Tradition hat. Warum also sollten Engländer nicht auch im Ausland etwas mit Sherry trinken wollen? Zumindest scheint er ihren Geschmack getroffen zu haben, so daß sie seinen Drink im ganzen Land propagierten.

Alternativ besteht natürlich die Möglichkeit, daß der Bamboo Cocktail nicht von Louis Eppinger stammt. Man könnte nämlich einwenden, daß – wenn der Drink so überaus beliebt wäre, daß er seinen Weg nach New York fand – es schon seltsam wäre, von dem Drink dort, wo er entstand, oder zumindest in dessen Umgebung, keine schriftlichen Erwähnungen zu finden. Auch könnte man sich fragen, warum in den Zeitungsartikeln nicht Louis Eppinger als Erfinder des Drinks genannt wurde, beziehungsweise warum wir von ihm nichts hören, sondern nur, daß der Drink durch Engländer bekannt gemacht worden sei. Letztere hätten doch vermutlich Louis Eppinger sicherlich genannt, wäre der Drink von ihm erfunden worden. Auch spricht gegen Louis Eppinger eventuell Carlo Beltramos Aussage in seinem 1924 erscheinenen Buch „Carlo’s Cocktails et Boissons américaines“, der Bamboo Cocktail sei in Indien sehr populär, worauf sicherlich auch die Bezeichnung „East Indian Cocktail“ für einen klassischen Bamboo Cocktail in Patrick Gavin Duffy 1934 erschienenen „The Official Mixer’s Manual“ hinweist. Es mag aber auch nur ein Zeichen dafür sein, wie sehr Louis Eppingers Cocktail bei den sherryliebenden Engländern angekommen ist. Wir sind also so schlau als wie zuvor.

Doch warum hätte William Boothby angeben sollen, der Bamboo Cocktail stamme von Louis Eppinger, wenn dies nicht stimmte? Er war sicherlich der Auffassung, der Drink sei von Louis Eppinger entwickelt, denn so gibt er es explizit an. Bei vielen anderen Drinks, die ihm von anderen Bartendern zugetragen wurden, aber die Urheberschaft offensichtlich nicht eindeutig geklärt ist, schreibt William Boothby „a la …“, und nicht „originated and namend by …“. Und warum hätte sich Louis Eppinger mit fremden Federn schmücken sollen? Er hatte Ruhm genug, denn in seinem Nachruf im Los Angeles Herald vom 17. Juni 1908 auf Seite 5 [5] lesen wir, er sei  „one of the best known hotel men on the Pacific coast and in the orient“, also einer der bestbekanntesten Hoteliers an der pazifischen Küste und im Orient. Leider wissen wir nicht, von wem William Boothby seine Information erhalten hat.

Unter Berücksichtigung all der zuvor aufgeführten Fakten schlagen wir vor, daß der Drink aller Wahrscheinlichkeit nach zwar von Louis Eppinger entwickelt wurde, jedoch nicht zu Beginn der 1890er Jahre im Grand Hotel in Yokohama entstand, sondern mindestens schon 1886, und zwar in Portland, Oregon, wo sich Louis Eppinger vor seinem Umzug nach Japan aufhielt. Woher der Drink jedoch seinen Namen hat, bleibt ein Mysterium der Geschichte.

Was ist ein Bamboo Cocktail?

Betrachtet man die historischen Rezepte, so zeigt sich einige Verwirrung. Mal wird Sherry verlangt, mal explizit ein trockener Sherry. Ungefähr die Hälfte verlangt entweder französischen Wermut oder italienischen. Überwiegend werden Orangenbitters eingesetzt, doch auch Angosturabitters und selten andere Bitters finden Verwendung. Oft verwendet man eine Zitronenzeste. Berücksichtigt man die japanische Tradition und William Boothby, so ist klar festzustellen, daß der Bamboo ein trockener Cocktail ist und deshalb nach einem trockenen Sherry und einen trockenen (französischen) Wermut verlangt. Hinzu kommen Orangenbitters, wer mag, kann auch noch Angosturabitters hinzugeben. Die Erstnennung des Bamboo Cocktails liegt im Jahr 1886, aber trockener Wermut wird erstmals explizit 1909 in Carl A. Seutters „Der Mixologist“ als Bestandteil angegeben. Jedoch dürfen wir unter Berücksichtigung der japanischen Tradition annehmen, daß er dort schon immer mit trockenem Sherry und Wermut hergestellt wurde.

Sobald der Bamboo Cocktail süßer wird, also mit italienischem Wermut und auch süßerem Sherry, liegt ein anderer Drink vor, nämlich ein Armour Cocktail respektive ein Adonis Cocktail. Auch hier herrscht einige Verwirrung, und wir werden sie in einem eigenen Beitrag betrachten müssen.

Bei einigen Rezepturen des Bamboo Cocktails wird angemerkt, daß der Drink auch als Reform Cocktail bezeichnet werde. Betrachtet man die Rezepturen, die als Reform Cocktail bezeichnet werden, so läßt sich feststellen, daß französischer Wermut und Sherry verwendet wird, zusammen mit Orangen- oder Angosturabitters. Gelegentlich wird mit einer Zitronenzeste abgespritzt und mit Kirsche dekoriert. In Zeiten der Prohibition verwahrlost die Rezeptur, und es kommen selten auch Grand Marnier, Orangensaft oder Zitronensaft verwendet. Die Aussage, daß der Bamboo Cocktail auch als Reform Cocktail bezeichnet werde, läßt sich somit bestätigen. Die erste gedruckte Rezeptur für einen Reform Cocktail haben wir 1913 bei Hans Schönfeld und John Leybold im „Lexikon der Getränke“ gefunden.

Weitere Bezeichnungen für einen Bamboo Cocktail sind die folgenden (wobei in Klammern das Jahr der ersten Erscheinung angegeben ist)

  • Adonis Cocktail (1925), doch diese Bezeichnung ist offensichtlich falsch und stammt her von der Verwirrung, die zwischen Bamboo Cocktail und Armour Cocktail respektive Adonis Cocktail herrscht.

Varianten des Bamboo Cocktails

Abgeleitet vom Bamboo Cocktail gibt es zahlreiche andere Drinks, die auf der Kombination von Sherry, Wermut und Bitters basieren. Wir haben sie hier in der Rezeptursammlung nicht aufgeführt. Die Rezepte der verschiedenen Ableitungen des Bamboo Cocktails zeigen eine ähnliche Bandbreite und Varianz der Zutaten wie der Bamboo Cocktail selber. Die Rezepturen dieser Varianten wollen wir im Rahmen dieser Abhandlung nicht in den historischen Rezepten auflisten. Grundsätzlich kann man jedoch feststellen:

  • Brazil Cocktail = Bamboo Cocktail + Absinth
  • Coronation Cocktail = Bamboo Cocktail + Maraschino
  • Greenbriar Cocktail = Bamboo Cocktail mit Pfirsichbitters + Minze

Darüber hinaus gibt es noch zahlreiche andere Varianten, für die wir jedoch nur wenige Quellen finden konnten, so daß wir sie an dieser Stelle ausschließen wollen.

Historische Rezepte

Hinweis: Wir empfehlen, parallel auch die Rezepte zum Adonis Cocktail anzuschauen. Es gibt hier in den historischen Büchern keine klare Trennung voneinander. Für uns haben wir entschieden, daß die trockeneren Rezepte hierher, zum Bamboo Cocktail, gehören. Das sind sie, wenn entweder französischer (trockener) Wermut oder trockener Sherry im Rezept vorkommt. Sobald italienischer Wermut oder einfach nur Sherry mit Wermut gefordert wird, haben wir das Rezept zum Adonis Cocktail geschrieben. Es sei denn, es handelt sich um eine Rezeptur zum Bamboo oder Reform Cocktail; dann erscheint die Rezeptur auch hier.

Observations
As the principal ingredients in this drink are
sweet wines, it will have the character of despon-
dency if nothing is added to liven it up. Orange
Bitters give it that needed vivacity and gayness.
However, Orange Bitters, a very strong and pen-
etrating aromatic, should be handled with great
care. Very little is needed, and an overdose will
spoil any drink. The similarity of color in the
component parts of this drink gives it a rather
dusky, yellowish tint, resembling that of the bam-
boo tree. Hence the name.

everywhere, but we append it just the same. Into a bar glass turn 1
jigger each of dry French vermouth and really good really dry sherry
— the usual sweet American sherry just won’t serve. Add 2 dashes of
orange bitters, plenty of big-lump ice, then stir with a bar spoon and
turn into a Manhattan glass. Garnish with green cherry or not, to
preference.
